Raw Corazon Chili
Who doesn't love chili? its great more a cold winters day, or for a barbaque during summer! This chili gives you all the health benefits of meat based chili but with the health benefits of vegetables!
cup sun dried tomatoes (soaked for 2 hours in warm water if totally dry and hard

cup almonds, soaked overnight
1/3
tsp high quality sea salt

tbsp chili powder

tbsp cumin
1/2
tbsp paprika
1 1/2
tbsp fresh lime juice
2
tsp olive oil
1 1/2
cups cold filtered water
cilantro for garnish
Directions

Put the carrots in a large bowl. Add the Portobello mushroom, sun dried tomatoes, almonds, spices, lime juice, olive oil and water to the work bowl of a food processor. Process to a chunky consistency. Add the processed mixture to the bowl with the carrots and stir. You can warm the Chili gently in a large pot. Serve in bowls, garnished with cilantro. Tomatoes are widely known for their outstanding antioxidant content, including, of course, their oftentimes-rich concentration of lycopene. Researchers have recently found an important connection between lycopene, its antioxidant properties, and bone health. They also contribute to cardiovascular support, anti- cancer benefits, and are great for when you are trying to shed an extra couple pounds.
