Mango Oatmeal Poppers

Great for when you don't have much time to make breakfast in the morning, so just make these the night before and and grab them for whenever your on the go!

Ingredients

cup unsweetened almond milk
1/2
cup plain unsweetened greek yogurt
1/4
cup maple syrup
2
tsp vanilla extract
1/2
tsp sea salt
2
eggs
2
cups rolled oats
1
cup toasted cashews, chopped
2
tsp baking powder
2
ripe mangos, finely chopped
canola oil (to spread on baking sheet
Directions

Preheat the oven to 350°F. In a large bowl, mix together almond milk, yogurt, syrup, vanilla, salt and eggs until well combined. Stir in oats, cashews, baking powder and mangoes, and set aside to let thicken for 10 minutes. Spread the Canola oil on the mini muffin tins. Spoon batter into tins, filling each cup about three-quarters full. Bake until just firm and golden brown around the edges, about 25 minutes. Let cool until warm and then loosen edges with a paring knife and serve.
