Emma Watson Vegan Breakfast Recipe

Tortillas
GUACAMOLE:

medium Onion

Avocado

tsp Cumin

small bunch Coriander
Medium Lime juice
Salt at taste
PICO DE GALLO:
1/2
medium Onion
3
medium Tomato
1/2
small bunch Coriander
1/2
Lime juice
Salt at taste
SCRAMBLED TOFU:
1
medium Onion
250
gr soft Tofu
1
tbsp neutral Oil
1/8
tsp Turmeric powder
Salt and Pepper at taste
Optional:
Kala namak (black salt) at taste
Directions
1.
Cut all the vegetables
2.
Smash the avocados with a fork, mix it with the onion and the coriander, and cover it so it doesn’t oxide
3.
Smash the tofu with a fork and reserve
4.
Stir-fry the onion until it gets transparent and add the tofu. Let it cook for a few minutes and season it
5.
Cut the 12 tortillas into squares, put them carefully in a cupcakes mold because they’re fragile and can easily break
6.
Grease the mold if necessary and brush the edges of the tortillas with a little bit of neutral oil
7.
Let it cook in a pre-heated at 180 ºC oven for about 15 minutes
8.
Stuff the baskets with the tofu, the pico de gallo, and the guacamole.
