Mrs. Mignogna's Tortellini Soup

Peggy believes in sharing recipes, especially this tortellini soup! I don't know why but it is not the same without Lou's sausage. (Heinen's, Miles Market and sometimes Marc's & Walmart carry it.)

Ingredients
1-1 1/2
lb lou's hot italian sausage
1
cup chopped onion
1
medium green pepper chopped into 1/2 inch pieces
2-3
cloves diced garlic
5
cups beef bouillon
1
cup water
1-28
oz can of seasoned diced tomatoes
1-8
oz can of tomato sauce
1/2
tsp oregano leaves
1/2
tsp basil leaves
2
tbsp parsley leaves
1-10
oz package frozen chopped spinach
1-8
oz package cheese tortellini
Directions
1.
Cook sausage in stockpot - remove from pot & crumble.
2.
Sauté onion, garlic & green pepper in sausage drippings.
3.
Add beef bouillon, water, canned tomatoes, basil, oregano, tomato sauce & sausage.
4.
Bring to a boil and simmer uncovered for 30 minutes
5.
Stir in parsley & spinach; cover & simmer for 1 hour
6.
Add tortellini in last 15 minutes
7.
Sprinkle with Parmesan cheese before serving.
