Stuffed Naan

Roti, naan and paratha's are a type of Indian staple bread. Stuffed naan has been traditionally eaten as is with black tea, with curry or as a wrap. The Indian flat bread is both hardy and filling.

Ingredients
Salt and red chilli powder to taste
Cup of water
1 cup of all purpose flour
1 tbls vegetable oil
1 large potato
1 small onion
2 curry leaves
Pinch of tumeric
1 teaspoon minced ginger and garlic paste
Directions
1.
Add pinch of salt, chilli and a tbls of vegetable oil to the flour. Knead into the flour. Put a cup of water in a pot and bring to boil
2.
Make a small indent in the center of the dry flour and pour hot water in small amounts

Keep folding the flour to make into a dough - be careful not to make it too wet as this will make rolling out the dough hard!

Once the flour has come into a ball, start kneading the dough for about 5 minutes.

Heat vegetable oil in a skillet and add onions. Caramelize onions to a golden brown, add garlic and ginger paste, curry leaves and chopped potato to the skillet. Add pinch of salt and turmeric. Add 1/2 cup of water and simmer until potatoes are soft.
6.
As the potato cooks, divide dough into 4 equal parts. Roll each ball of dough out.
7.
If dough sticks to rolling pin, use dry flour to take out the wetness or use a few drops of oil.
8.
Once the potato is cooked, take 1 tbls of the mixture and put in the center of rolled out dough.
