Cream Of Onion Soup

Ingredients

small potatoes, sliced
3
cups vegetable stock
3 1/2
cups chopped onions
1
tbsp oil
2
tbsp butter
1/3
cup dry white wine
6
oz cream cheese
1
cup milk
1
tsp salt
1/4
tsp pepper
Directions
1.
Cook potatoes in vegetable stock until tender. Remove potatoes, but save stock.
2.
Saute onions in oil and butter. When translucent, add wine.
3.
In a blender, puree cream cheese, onions and potatoes with some of the stock. Add the rest of the stock.
4.
Add milk, salt and pepper. Heat, stirring carefully.
5.
Garnish with parsley, croutons or grated cheddar.
