7th Hole: Leg Of Lamb

Yankee import into our southern kitchens.

Ingredients
leg of lamb (usually about 6 lbs)
red wine vinegar
salt
pepper
onions
carrots
potatoes
Directions
1.
Preheat oven to 325.
2.
Rinse meat with red wine vinegar.
3.
Salt and pepper as desired.
4.
Place fat side up on rack in open pan.
5.
Surround base of meat with onions, carrots and potatoes.
6.
Roast 30 to 35 minutes per pound.
7.
Serve with canned pear halves, mint jelly and rolls.
