Stuffed Salmon Rolls

Ingredients

oz Salmon Fillets, skins removed
1-12
oz container ricotta cheese
1/2
cup Parmesan, grated
2
tbsp Basil, chopped
2
tbsp Lemon Zest
Salt and Pepper to taste
1/2
lb asparagus, trimmed
1
tbsp butter
1/2
cup Chicken Broth
2
tsp Lemon Juice
2
tsp Corn Starch
Directions
1.
Preheat oven to 425°.

Season salmon with salt and pepper to taste, lay fillets skin side down, set aside.
3.
Meanwhile, mix together ricotta, parmesan, basil, lemon zest, salt and pepper in a bowl.
4.
Top salmon fillets with ricotta mix and several asparagus spears, roll up and fasten with toothpicks if needed and place fillets seam side down on a baking sheet. Bake for about 15 minutes.
5.
Meanwhile, melt butter in a small sauce pan over medium heat, add broth, lemon juice, and corn starch, heat until thickens (3-5minutes).
6.
Serve salmon rolls topped with sauce, and garnish with basil and lemon zest if desired.
