Cheesey Spinach Stuffed Chicken

Ingredients
1
lb boneless, skinless Chicken Breasts
4
oz Shredded Pepper Jack Cheese
1
cup Frozen Spinach, thawed and drained (or fresh)
2
tbsp Vegetable Oil
2
tsp Cajun Seasoning
1
tbsp Bread Crumbs
Sea Salt to taste
Black Pepper to taste
Directions
1.
Preheat oven to 350°F.
2.
Butterfly cut the chicken and then flatten chicken to 1/4" thickness and set aside.
3.
In a medium bowl, combine pepper jack, spinach, salt, and pepper, set aside.

Combine Cajun seasoning and bread crumbs in a small bowl, set aside
5.
Spoon about 1/4 cup spinach mixture onto each breast, roll tightly, and fasten with toothpicks.
6.
Set chicken breasts on a foil lined baking sheet, seam side down, and brush each with vegetable oil and top with Cajun mix and any remaining cheese mixture.
7.
Bake chicken breasts for 35-40 minutes, until chicken is cooked through.
8.
Remove toothpicks before serving!
