Christmas Capaletti's

Lilac, this is our family recipe for Christmas Cuppalette's. It is a Northern Italian soup that is handed down from The Pitts side of the family. This would be on my father's, father's side. Cuppalette means "Little Hat"

whole chicken

cup Fresh Parsley or 1 Tbsp Dried

tsp Thyme, Rosemary, and Basil

stalks Celery cut in pieces

Onion

Garlic globe
Stuffing

lb Lean Ground Pork
1
lb Lean Ground Veal
1
lb Chicken from broth
1
tsp garlic powder
1/2
lb parmesan cheese

eggs
Dough
6
cups All-purpose flour
1/2
tsp salt

eggs

tbsp olive oil
Directions

This is a two day prep time as the chicken broth is made the night before. Salt and pepper to taste. Boil in large pot and cook until chicken separates from the bone. Once the meat is separated, place broth in the refrigerator overnight. The next day scoop off all the fat that floats to the top. VERY important this step is followed.

Brown the Ground Pork and Veal until cooked. Combine in large bowl all the ingredients for the stuffing. If the stuffing gets to dry, you can add some of the chicken broth to make it more maleable.

For the dough, I recommend you use a bread machine. This cuts down hours of work and makes it much easier to make. Make sure you let the dough settle at least 15 minutes before rolling out.

Roll dough-make Capaletti's. take a small portion of the dough ( about the size of a tennis ball) on a lightly floured board. I like to use wax paper as it keeps it from sticking even more. Roll out the dough so that it is thin. Here is where I differ from the traditional cut. I use a small wine glass to make circles of the dough. Traditionally, you are to use a square cut in 2 inch sides. Place ball of filing into the center of cut dough and fold into a Cap. Place on cloth to dry and turn at least once.
5.
Bring Broth to a boil, and gently add the Capaletti's. Turn heat down to simmer and cook for 1 hour stirring occasionally with Wooden spoon to avoid sticking together.
