Lemony Kale Mushroom Salad

Ingredients

lb mushrooms, sliced or quartered
1/4
cup lemon juice
1/4
cup olive oil
1
tsp salt
dash cayenne
2
cloves garlic, minced
1
lb kale
1/2
cup chopped pecans
Directions
1.
Roast mushrooms on 375 for about 20 minutes - until they release liquid
2.
Massage kale in a ziplock to soften.
3.
Add mushrooms with liquid.
4.
Mix dressing ingredients and add to kale.
5.
Add pecans before serving.
