Ginger Napa Salad

Ingredients

napa cabbage, shredded
1/2
red bell pepper, thin strips
Peanuts or cashews
Dressing:
2-3
inches fresh ginger, peeled and roughly cut
1/2
cup vegetable oil
1/2
cup seasoned rice vinegar
dash salt
Directions
1.
Add cabbage to red pepper and toss.
2.
Blend dressing ingredients in a food processor or blender.
3.
Pour over salad and toss.
