Ginger Miso Tofu

Ingredients
1
(14 oz) block of organic extra-firm tofu (find one that is not too dry), cut into 8 slices
3
tbsp soy sauce
1
tbsp minced ginger
1
garlic clove, minced
1/8
tsp of cayenne
1
tbsp honey or agave nectar (optional)
2
tsp lime juice
2
tbsp light miso
2
tbsp mirin
1
tbsp dark sesame oil
3
tbsp grapeseed oil or sunflower oil
Directions
1.
Dry out the tofu, and slice it however you like. For this recipe, I usually make longish rectangles, about 1cm thick.
2.
Mix all the ingredients, except for the tofu. Pour them over the tofu in a single layer, and let that marinate at least 15 minutes. Turn them over at least once; longer is better.
3.
Roast at 375, 20 minutes or longer. At that temperature the tofu will begin to darken, but it will also firm up the longer you keep it in there.
