Cauliflower Fried Rice

Ingredients

cup Cauliflower (1 head)
3/4
cup chopped Yellow Onion

tbsp Vegetable Oil

Eggs, lightly beaten
1
tsp Sesame Oil
1
tsp Soy Sauce
1/2
cup shredded baby Carrots
1/2
cup frozen peas, thawed
4
Green Onions, chopped
2
cups Bean Sprouts
1/4
cup Soy Sauce
Directions
1.
Cut away core of cauliflower, dry off excess water, cut into florets and place in a food processor, pulse until it looks like rice, put florets in a medium bowl and set aside.
2.
Heat 1 tbsp of oil in wok or large pan over medium heat, when hot add chopped onion and stir fry until light brown. Remove onions from pan and set aside in a bowl.

Ina small bowl, mix together eggs, sesame oil, and soy sauce.

Add 1/2 tbsp oil to wok or pan, add egg mix and quickly scramble, remove from pan and add to bowl of onions, set aside.
5.
Add 1/2 tbsp oil to wok or pan and add cauliflower, peas, carrots, green onion, and bean sprouts. Stir fry for 3 minutes, reduce heat to medium-low, mix in soy auce and cover with lid for 3 minutes or until cauliflower is cooked through. Add in egg and onion mix and cook until all is mixed and warm together, remove from heat and serve.
