Grampa Charlie's Beef Stew

This Guinness Stew is so easy to make. Just a little prep work and you have a one pot meal. Guinness Beer helps create a smooth wonderful sauce with flavors and smells that will fill your kitchen. This is excellent the day you make it. But the leftovers will leave you thinking how can this be even better the day after. Grampa Charlie raises beef cattle and butchers them for the family. His grass fed free range cattle make for amazing meals.

Ingredients
EVOO

lb of beef stew meat cubed into 1-2" pieces
1/4
cup flour
salt and pepper
4
large cloves of garlic, minced
1
medium red onion, minced
5
slices of bacon diced
1
can Guinness Beer
5
tbsp tomato paste
1 1/2
cups beef broth
3
carrots, peeled and sliced into bite size chunks
2
stalks celery sliced down middle and diced
4
or 5 small potatoes cubed into bite size chunks
2
Bay leaves
3
fresh sprigs thyme
1
piece of fresh rosemary
Directions
1.
Put the stew meat flour and generous amounts of salt and pepper into a large baggie. Mix well until all the meet is coated with flour and seasonings.

Heat EVOO in the same pot your going to cook the stew in. Add the stew meat a third at a time and brown on all sides, remove to a plate and finish browning the rest. Might have to add a little more EVOO to complete the process.

Add onion and garlic and sauté until soft, then add the bacon and cook until brown. Put the stew meat and any drippings back into the pan, add the Guinness, tomato paste, carrots, celery, potatoes and stir to combine. Add the beef broth, Bay leaves Thyme and Rosemary and bring to a boil. Cover, turn down the heat to simmer and gently cook for 1 1/2 to 2 hours or until the stew meat is falling apart. Remove the lid and let simmer another 30 minutes until the sauce has thickened slightly.
4.
Remove the Bay leaves, thyme sprigs and rosemary.
5.
A loaf of crusty bread and your all ready!
