Challah

This was passed on to me from a cousin who made Shabbat dinner regularly for her family of 6. Unfortunately she died in her early 50's but is famous in our family for this easy and delicious recipe. Although it says to use a mixmaster, I do it by hand (just make sure to Pam them well before you dig in).

Ingredients

cups bread flour

eggs

tsp salt

pkg RAPID RISE yeast, dissolved per package instructions

tbsp sugar

tsp oil
1
cup very hot tap water (do not use scalding water like from a filter - it will kill the yeast)
Directions
1.
Combine all ingredients except hot water in mixmaster(until its grainy). Slowly add water until dough doesn't stick to sides (probably 3/4 of the cup or so). Spray a large bowl with Pam. Put dough in the bowl in a warm spot covered with a dish towel for 1 1/2 hours. After 1 1/2 hours, spray hands well with Pam and separate into either 3-4 equal portions for braiding or one long portion to form into a round shape. Tuck ends under to secure (a little water can help with this step). Put prepared challah onto sprayed cookie sheet. Cover with dish towel and put in a warm spot for 1/2 hour. Bake at 350 for 30 minutes.

Option before baking to glaze with egg and or cinnamon/sugar.
