Shrimp Scampi

Ingredients

lb linguini

tbsp unsalted butter
2 1/2
tbsp olive oil
1 1/2
tbsp minced garlic (4 cloves)
1
lb large shrimp, peeled and deveined
freshly ground black pepper, to taste
1/3
cup chopped fresh parsley
1/4
cup freshly squeezed lemon juice (2 lemons)
1/8
tsp hot red pepper flakes (optional)
Directions
1.
Salt a large pot of boiling water and add the linguini, cook 7 to 10 minutes , or according to package directions. In a large sauté pan melt the butter and olive oil over medium-low heat. Add the garlic. Sauté for 1 minute, watch it closely so it doesn't burn. Add the shrimp, and season with freshly ground black pepper. Sauté until the shrimp just turn pink, about 5 minutes, stirring often. Remove from the heat and add the parsley, lemon juice, and hot pepper flakes if using. Toss to combine. When the pasta is done drain in a colander and add to the shrimp mixture, toss well and serve.
