Orzo And Spinach Soup

Ingredients

tbsp olive oil
1
small onion, peeled and diced
1
cup carrots, diced
1
cup celery, diced
3
cloves garlic, minced
6
cups chicken stock or broth
1
can (14 oz) diced tomatoes
1 1/2
cups orzo
1/2
tsp dried thyme
1/4
tsp dried oregano
1/4
tsp dried basil
4
cups loosely packed fresh spinach
salt and freshly ground black pepper to taste
parmesan cheese to taste
Directions

Heat oil in a dutch oven or large pot over medium-high heat. Add onion and sauté until soft and translucent. Add carrots, celery, and garlic and sauté for an additional 3 minutes. Add chicken stock, tomatoes, orzo, thyme, oregano, and basil; stir to combine. Bring soup to a simmer, stirring occasionally. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, until pasta is al dente. Stir in the spinach and cook for 1 to 2 minutes until spinach wilts. Season to taste with salt and pepper. Serve and top with parmesan cheese.
