Pumpkin Bread

Ingredients
1 1/2
cups sugar
1
cup (8 oz) canned pumpkin puree
2
large eggs
1/2
cup almond oil (any nut oil is fine, I typically use walnut)
1 3/4
cups all purpose flour
1
tsp baking soda
1/2
tsp baking powder
1/2
tsp salt
1/2
tsp ground cinnamon
1/2
tsp ground cloves
1/2
tsp grated nutmeg
candied nuts (optional)
Directions
1.
preheat oven to 350 degrees
2.
grease/spray 9x5 inch pan
3.
in a bowl, whisk together sugar, pumpkin puree, eggs and oil until smooth
4.
in another bowl, stir together flour, baking soda, baking powder, salt, cinnamon, cloves and nutmeg
5.
add flour mixture to pumpkin mixture and beat until smooth and well combined (batter will be thick)
6.
pour in pan, sprinkle crushed nuts (almonds, pecans, whatever) on top - sprinkle on extra cinnamon, nutmeg and cloves to add flavor (if desired)
7.
bake until top browned and crusty and develops long center crack (about 60-70 minutes)
8.
I've also used 8x* pan and it takes approximately 50 minutes)
