Spinach Lasagna

Ingredients
1
box lasagna noodles
2
jars tomato vodka sauce
2
boxes frozen chopped spinach
1
(15 oz) container ricotta cheese
3
eggs
16
oz grated mozzarella cheese (or an Italian cheese blend)
1
cup parmesan cheese
Italian seasoning, salt, and pepper to taste
Directions
1.
Pre-heat oven to 350.
2.
Cook the lasagna noodles according to instructions so they are al dente, drain, and place in cold water so they don’t stick.
3.
While noodles cook, defrost the spinach in the microwave. Drain the spinach of all water by pressing in a sieve.
4.
Mix the spinach with the ricotta cheese and the eggs. Season to taste.
5.
In a lasagna pan, pour a thin layer of the sauce, followed by a layer of noodles, then sauce again, then the spinach mixture, then cheese. Repeat starting with the lasagna layer until you run out. End with the cheese layer and add the parmesan cheese.
6.
Cook covered with tinfoil for about 45 minutes, then uncovered for the last 15 or so -- the Parmesan cheese should look melted and slightly golden, and if you stick a fork into the lasagna, the spaghetti sauce should be bubbly hot.
