Sweet Pickle Relish

Ann Hanger's recipe from 2014. Makes about 7 half-pint jars.

Ingredients
4
cups chopped cucumber
2
cups chopped onion
1
chopped green pepper
1
chopped red pepper
1/4
cup pickling salt
1 3/4
cups sugar
1
cup apple cider vinegar
1 1/2
tsp celery seed
1 1/2
tsp mustard seed
Directions
1.
Combine the first four ingredients in a large bowl and sprinkle evenly with pickling salt.
2.
Cover with cold water and let stand for 2 hours. Drain.
3.
Combine sugar, vinegar, and spices in a large dutch oven. Bring to a boil and then add vegetables. Return to a boil and reduce heat, allow to simmer for 10 minutes.
4.
Pack into hot jars, filling 1/2 inch from the top. Remove air bubbles and wipe jar rims. Adjust lids and process in boiling water bath for 10 minutes.
