Red Pepper Couscous

Ingredients
3/4
cup red bell pepper, chopped
1/2
cup red onion, chopped

tsp olive oil
3/4
cup Israeli couscous
1 1/4
cups water
1/4
tsp salt
1/4
tsp black pepper
3
tbsp fresh lime juice
2
tbsp fresh cilantro, chopped
1
jalapeno pepper, seeded and finely chopped
Directions
1.
Saute bell pepper and onion in oil for 3 minutes.
2.
Add couscous, 1 1/4 cups water, salt, and black pepper; bring to a boil.
3.
Reduce heat to medium-low; cover and simmer 8 minutes.
4.
Stir in juice, cilantro, and jalapeno.
