Scalloped Potatoes

Use a shallow baking dish for more browning. Even better reheated!

Ingredients

medium potatoes, peeled and thinly sliced
4
tbsp butter, divided
1
small onion, chopped
3
tbsp flour
1
tsp salt
1/4
tsp pepper
2 1/2
cups milk
Directions
1.
Preheat oven to 350 degrees. Grease 2-quart casserole dish.
2.
Melt 3 tablespoons butter in saucepan over medium heat. Cook onion in butter for 2 minutes, stirring occasionally, until tender.

Stir in flour, salt, and pepper. Cook, stirring constantly, until smooth and bubbly. Remove from heat.
4.
Stir in milk. Heat to boiling, stirring constantly. Boil and stir for 1 minute.
5.
Spread half of potatoes in casserole. Pour half of sauce over potatoes. Repeat with second half. Dot with 1 tablespoon butter.
6.
Cover and bake 30 minutes. Uncover and bake 90 minutes until tender. Let stand 10 minutes before serving.
