Big Nana's Marinara Sauce

One batch fills 4 mason jars.

Ingredients

cans San Marzano peeled plum tomatoes
2
tbsp olive oil
2
large onions, chopped
8-10
cloves garlic, chopped
1/2
tsp crushed red pepper
1/4
tsp Accent
6
generous pinches fennel, crushed
2
tbsp salt
Baking soda
1
lb meatballs, browned (optional)
3
links spicy chicken sausage, browned (optional)
Directions
1.
Blend tomatoes in blender until smooth. Pour into a large pot on stove. Simmer over low heat.
2.
In a large frying pan, saute onions and garlic in olive oil just until garlic starts to brown. Pour saute mixture into tomatoes.
3.
Add crushed red pepper, Accent, fennel, and salt.
4.
Add baking soda (about 3 wet forkfuls) until the sauce foams.
5.
Add meat to sauce, if desired.
6.
Simmer sauce for 1 hour if with meat, or 15 minutes without meat.
