Beef Empanadas

Ingredients

medium onion, diced small

small red bell pepper, diced small

lb ground beef or meatloaf mix

cup tomato sauce
1/2-1
tsp cumin

tsp cayenne pepper

tsp garlic, minced
freshly ground black pepper

tsp garlic powder
1/2
tsp onion powder
1
(10 pack) empanada wrappers, thawed
1
egg, lightly beaten with 1 teaspoon water
1
tsp chili powder
1
tsp paprika

cups shredded sharp cheddar cheese
Directions

Preheat oven to 375 degrees. Line a baking sheet with parchment paper; set aside. Heat oil in a large skillet over medium heat. Add the onion and bell pepper and sauté until soft. Add the ground beef to the pan, breaking it up with a spoon, and cook until browned about 10 to 15 minutes, drain fat. Stir in the tomato sauce, and spices. Lower the heat to medium-low and simmer until mixture thickens about 15 minutes. Remove from heat and set aside to cool. Once cooled spoon about 2 heaping tablespoons of meat mixture into the middle of an empanada wrapper and top with 2 tablespoons of cheddar cheese. Fold in half to form a half-moon; moisten edges with water and crimp with a fork. Repeat with remaining empanada wrappers. Place on the prepared baking sheet and brush the tops of the empanadas with the egg wash. Bake for 30 minutes or until golden brown.
