Potato Salad

Ingredients
6-8
medium yukon gold or white potatoes, scrubbed clean and quartered
3
tbsp red wine vinegar
2
celery stalks, diced
3
green onions, chopped
3
hard boiled eggs, peeled and diced
1
cup miracle whip or regular mayonnaise, or a combination of both
1
tbsp yellow mustard
garlic powder, to taste
freshly ground black pepper, to taste
Paprika for garnish
Directions
1.
Bring potatoes to a boil in a large pot of cold salted water. Boil for 10 to 15 minutes or until the potatoes are easily pierced with a fork. Drain and let cool until just able to handle. Peel the skins from the potatoes and cut into large diced pieces if quarters are to big. Transfer to a large bowl and sprinkle with the vinegar and stir. Allow the potatoes to cool for 15 minutes. Add the celery, green onion, and hard boiled eggs to the potatoes. In a separate medium bowl mix the mayonnaise, mustard, garlic powder, and pepper. Add the mayonnaise mixture into the potatoes and mix well being carful not to break up the potatoes. Adjust seasoning if needed. Cover with plastic wrap and chill for at least 1 hour or overnight.
