Snickerdoodle Apple Bread

cup unsalted butter, room temperature

cup packed light brown sugar
1/4
cup sugar
1/2
tbsp cinnamon

large eggs, room temperature

tbsp pure vanilla extract
1/2
cup milk
1
large golden delicious apple, diced small
Cinnamon Sugar Topping:

tbsp sugar
1
tsp cinnamon
Directions

Preheat oven to 350°. Grease a 9x5 loaf pan with cooking spray. Line the bottom and sides with parchment paper and spray again; set aside. In a medium bowl whisk together the flour, salt, cinnamon and baking powder. In a large bowl using an electric mixer or in the bowl of a stand mixer cream the butter, sugar, and brown sugar for two minutes on medium speed, scraping the sides of the bowl as needed. Add eggs one at a time beating well after each addition; add in vanilla and beat until incorporated. With mixer on low add in the flour mixture and milk in alternating additions, starting and ending with flour. mix until just combined. Add in the apples and stir just until combined. Pour batter into prepared pan and bake for 40 to 55 minutes or until bread is set and a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes. Remove from pan and transfer to a wire rack to cool completely.
