Baked Pumpkin Cake Doughnuts

cup canola oil

large eggs

cups sugar
1 1/2
cup pumpkin purée (canned 100% pumpkin)
1 1/2
tsp pumpkin pie spice
1 1/2
tsp salt
1 1/2
tsp baking powder

cups unbleached all-purpose flour
Directions

Preheat oven to 350° . Lightly grease a doughnut pan. If you don't have a doughnut pan you can bake these in a muffin tin. Beat together the oil, eggs, sugar, pumpkin, pumpkin pie spice, salt, and baking powder until smooth. Add in the flour, just stirring just until smooth. Fill the wells of the doughnut pan about 3/4 full; use a scant 1/4 cup of the batter in each well. If your making muffins, fill each well about 3/4 full. Bake the doughnuts for 15 to 18 minutes, or until a toothpick inserted into the center of one comes out clean. If your making muffins, bake 23 to 25 minutes. Remove the doughnuts from the oven, and after 5 minutes, loosen the edges, and transfer to a wire rack to cool. While the doughnuts are still warm gently coat them with the cinnamon sugar. If you have made muffins dip each muffin top in the cinnamon sugar.
