Fudge Brownie Cupcakes With Peanut Butter Frosting

Ingredients
Cupcakes:

cup (1 stick) unsalted butter, melted

cup packed light brown sugar

cup unsweetened cocoa powder

tbsp vanilla extract

large eggs, room temperature

tsp salt

tsp baking powder

cup unbleached all-purpose flour
Peanut Butter Frosting:

tbsp unsalted butter, room temperature

cup creamy peanut butter
1
cup confectioner's sugar
1/3
cup heavy cream
1
tsp vanilla extract
1/4
tsp salt

Make The Cupcakes:

Preheat oven to 375°. Line a muffin tin with cupcake liners. Melt butter in a medium saucepan over low heat, add the sugar and whisk until sugar is dissolved and mixture is smooth. Remove from the heat and let cool for 10 minutes. Whisk in the vanilla and eggs. In a separate bowl, mix together the salt, baking powder, cocoa powder, and flour. Slowly add to the wet ingredients and stir to completely combine. Fill the muffin tins 2/3 full. Bake for 8 to 10 minutes; allow to cool completely.

Make The Frosting:

In a medium bowl beat the softened butter on medium speed for 1 minute until smooth and creamy. Add the peanut butter and beat until combined. Add in the confectioner's sugar, cream, vanilla, and salt. Beat on low speed for 20 seconds than increase to medium speed and beat for 1 minute. Frost cooled cupcakes
