Ham And Lentil Soup

Ingredients

tbsp olive oil
1
medium onion, chopped
1
carrot, chopped
2
stalks celery, chopped
2
cloves garlic, minced
4
cups chicken broth or stock
1
cup dry lentils
2
cups ham diced (leftover from baked ham or use ham steaks)
1
ham bone (optional but great for added flavor)
1/2
tsp dried oregano
1
bay leaf
1/2
tsp dried thyme or 1 teaspoon fresh thyme leaves
freshly ground black pepper, to taste
1
bunch fresh spinach, rinsed
Directions
1.
Heat oil in a dutch oven or large saucepan. Add the onion, carrot, and celery, and sauté until tender, about 10 to 15 minutes. Add the garlic and sauté until fragrant being careful not to brown it. Add the stock, lentil, ham, ham bone, oregano, bay leaf, pepper, and thyme. Simmer partially covered on low heat for 1 hour. Remove from heat and stir in the spinach.
