Pasta Fagioli Soup

Ingredients

oz (1/2 lb) ditalini pasta cooked according to package directions

tbsp olive oil
1
small onion or 1/2 of a medium onion, minced
2
cloves garlic, minced
1
can (28 oz) plum tomatoes
32
oz chicken broth
1
bay leaf
freshly ground black pepper to taste
2
cans cannellini beans, drained and rinsed
fresh basil or parsley
grated parmesan cheese
1/4
cup pancetta (optional)
Directions
1.
Heat olive oil in a medium pot or a dutch oven. Add onion; sauté for 2 to 3 minutes. Add the pancetta if using and sauté for 2 to 3 minutes. Add the garlic and sauté for an additional minute. Blend tomatoes with one can of cannellini beans until smooth. Add chicken broth, tomato-bean puree, bay leaf, and remaining can of whole beans to the pot; season with pepper. Simmer for 20 to 30 minutes. Remove from heat and add basil or parsley. To serve spoon some pasta into a bowl and top with the soup and sprinkle with parmesan cheese.
