Split Pea And Ham Soup

I got this recipe from my nan. Perfect for winter or just a simple comfort food. I also like to add celery and any other veggies that i feel like at the time.

Ingredients
1
ham bone
2
cup ham, diced into 1/2 pieces, fat and skin removed (use a little more or less to your liking
1
medium onion, diced
1
carrot, peeled and grate
1
packet. dry split peas, odd ones removed
7
cup water (for thinner soup, use 8 cups
1/2
cup of equal parts light cream and milk
1
bay leaf
1
tbsp butter
1
tbsp extra virgin olive oil
sea salt and cracked black pepper to taste
Directions
1.
Peel and dice, 1 Medium onion
2.
Peel and grate, 1 Carrot
3.
Sort through the peas removing all odd looking ones (odd color or shape)
4.
Cut meat from the bone removing excess fat and skin then dice meat (about 2 cups)
5.
In a medium fry pan add butter and oil melt then add carrot and onion and fry until onion is softened about 7min.

In a medium to large pot through in all ingredients (onion, carrot, ham bone, ham)

Pour in enough water to cover about 7 cups. Add a pinch of salt, pepper and the bay leaf.
8.
Bring to the boil then cover and simmer until peas are disintegrated about 2 1/2 - 3 hours.
9.
Once done remove bone and bay leaf and stir in milk and cream.
10.
Let simmer for 10-15min until desired consistency.
11.
Serve and enjoy.
