Mexican Style Spaghetti Squash

Serves 4people
Ingredients
1
spaghetti squash
1
can of black beans
1
can of diced tomatoes
1
cup mozzarella cheese
1
package of ground turkey, chicken or beef
taco seasoning
Directions
1.
Bake spaghetti squash as normally would. Cut in half, face up, spray with olive oil and sprinkle with salt and pepper. (Bake at 400F for 40-50 minutes).
2.
Scoop spaghetti squash out into baking pan (glass preferred or metal is fine).
3.
Rinse/Drain can of black beans, then pour over top of spaghetti squash.
4.
Open canned tomatoes, do not drain, pour into baking pan over top squash and beans. Can mix tomatoes and beans into squash or leave layered on top.
5.
Top it off with mozzarella cheese to amount of your liking.
6.
Bake at 400 for another 15-20 minutes.
7.
Make taco meat separately on stove top. Once both are done, can individually top spaghetti squash with taco meat as dish is eaten by serving. :)
