Sweet Potato Biscuits

A delicious substitute for buns at big family dinners.

Ingredients

+ 3/4 cups all-purpose flour, plus more for kneading and shaping

tbsp brown sugar

tsp baking powder

tsp salt

tsp baking soda

tbsp chilled unsalted butter, cut into pieces, plus 1/2 tablespoon melted butter and more for pan
1
+ 1/2 c. chilled sweet-potato puree

cup buttermilk
Directions
1.
In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda.

With a pastry blender, cut in butter until mixture resembles coarse meal, with some pea-sized lumps of butter remaining.
3.
In a small bowl, whisk together sweet potato puree and buttermilk;
4.
stir quickly into flour mixture until combined (do not overmix).
5.
Roll out onto floured surface, then fold into thirds.
6.
Turn, roll out and fold into thirds.
7.
Roll to 1/4 - 1/2"
8.
Cut out using biscuit cutters
9.
Bake 20 min. in a 425 degree oven.
