cup corn kernels (canned, fresh or frozen is fine)

Directions

Heat oven to 375.

Grease 9 x 9 pan.

Combine dry ingredients. Stir in milk, egg, and oil until dry ingredients are moistened. Don't over mix. Pour batter into prepared pan. Bake 20 or so minutes. or until very light golden brown and toothpick inserted in middle comes out clean. Don't over bake! Cool a bit and cut into squares.

When woodstove is hot, place cornbread pieces into a hot, buttered cast iron skillet. Put on woodstove and watch (turning once or twice) until tops and bottoms are browned and crisped. Serve warm.
