Loomis Valley Loop Blueberry French Toast Bake

Prepare this breakfast casserole the night before or bake at home and reheat at the cabin. Great way to have a nice warm breakfast before heading out for a morning ski on the Loomis Valley Road loop.

Ingredients
1/2
cup butter
1
cup brown sugar
1/4
cup maple syrup
Loaf of Anadama bread (or other thick cut bread)
6-8
eggs (depends on the thickness and dryness of bread)
1 1/2
cups milk
1 1/2
tsp vanilla
2
tsp cinnamon, extra to sprinkle on the top
1/2
tsp nutmeg
1
cup (more or less) blueberries
Directions
1.
Combine maple syrup, butter, and brown sugar in a saucepan. Heat til simmering. Remove from heat.

Grease the bottom of a 9x13 Pyrex dish

Slice bread (if needed) to desired thickness. I recommend the slices be slighter thicker than sandwich bread.

Beat together eggs, milk, vanilla, cinnamon, and nutmeg.

Beginning with syrup mixture, then bread, layer the syrup mixture, bread, blueberries, and egg mixture until complete. Bread should be well saturated. Sprinkle cinnamon and a few blueberries on top. I add a few pats of butter on top to keep it from drying out during baking.

Refrigerate overnight

Bake at 350 for 50-60 minutes or until cooked through
Cut into squares, serve with maple syrup.
