Blackened Steak With Blue Cheese Wine Sauce

Ingredients

steaks
steak seasoning

tbsp EVOO
1/4
cup red wine
3
tbsp blue cheese crumbles
Directions
1.
Heat a large skillet over medium high heat for 1 minute, Meanwhile rub all side of the steak with EVOO and seasoning.
2.
Add a few drops of oil to the pan and swirl to lightly coat. Put steak in skillet and sear for 1 minute on each side. Turn heat to medium low and cook, turning every 2 minutes, until steak is almost cooked for your liking (it will continue to cook in step 3).
3.
Turn burner back to medium high heat and add wine and blue cheese off the burner. Wait until the wine has stopped steaming and return pan to the heat. Simmer until sauce thickens then turn to coat steaks with sauce.
4.
Move steak to a clean plate, cover loosely with foil and let them rest for 5 minutes before serving to ensure they will be nice and juicy.
