Butternut Squash Sauce

This is the sauce we made and put over zoodles when I came to visit. :) -Micki

Serves 8people
Ingredients
1
medium butternut squash
1
sweet onion
1-2
cups vegetable broth
1/2-3/4
cups coconut milk or heavy whipping cream
garlic
sage
Directions
1.
Preheat oven to 375* and bake butternut squash for ~ 60 min.
2.
While squash is baking, cut onion into thin strips and sauté until caramelized (about 30-45 minutes).
3.
Chop garlic and add in the last few minutes of sauté onions.
4.
Take squash out of oven, let cool, then peel skin and chop squash into small pieces.
5.
Place squash and caramelized onions in blender.
6.
Add in ~ ½ to ¾ cup of coconut milk or heavy whipping cream.
7.
Start to blend and add in vegetable broth as needed to liquefy.
8.
Lightly sauté sage.
9.
Serve sauce over pasta or veggies of choice, top with sage.
