Picadillo

Picadillo is Latin comfort food - a soft, fragrant stew of ground beef and tomatoes, with raisins added for sweetness and olives for salt. I substitute ground turkey for the beef, and serve over brown rice. After a day of skiing, it’s easy to heat up and very satisfying!

Ingredients

lb ground turkey

med onion chopped

med green pepper chopped
olive oil for sautéing
1/2
cup green olives (2 oz. jar)
1/2
cup raisins
1 1/2
cups crushed fresh or canned tomatoes
1
cup chicken broth
2
or more cloves garlic crushed
1/2
tsp ground cumin
1/4
tsp ground cloves
1
bay leaf
dash of cinnamon
Salt and pepper to taste
Directions
1.
Saute ground meat, onions, and peppers in olive oil until meat is no longer pink. Add other ingredients & simmer 30-60 minutes. Serve with rice, salad, and crusty bread.
