Zucchini Relish

This is very good and nice to make ahead for a side dish. Grammy really liked this.

Ingredients

cups diced zucchini
1
large thinly sliced onion

ribs celery sliced
2
medium carrots sliced

medium red pepper sliced

tbsp salt
3/4
cup sugar
1/2
cup water
1/2
cup cider vinegar
1/2
tsp celery seed
dash onion salt
dash tumeric
Directions
1.
In large bowl, combine veggies and sprinkle with salt. Cover with water and let stand 3 hours then rinse and drain. Bring remaining ingredients to a boil. Stir in veggies and return to a boil. Reduce heat and simmer uncovered for 5 minutes. Cool, cover, and refrigerate for at least 2 days.
