Banana Crunch Cake

This recipe is a great way to use up those over ripe bananas.

Ingredients

cup butter

cup brown sugar

cup mashed banana

eggs
1 1/2
tsp vanilla

cup ground oat flour
3/4
cup all purpose flour

tsp salt
1
tsp baking soda
crunch topping
1/2
cup oat flour
3
tbsp brown sugar
2
tbsp butter
2
tbsp chopped nuts
1/4
tsp cinnamon
1/4
cup chocolate chips
Directions
1.
To make the oat flour, place 1 1/4 cups of oats in the blender and blend on high until you have a flour-like consistency.
2.
Beat together the butter and brown sugar.
3.
Add the banana, eggs, and vanilla. Mix well.
4.
In a separate bowl, blend together the dry ingredients. Gradually add the dry ingredient mixture to the wet mixture.
5.
Pour the batter into a greased and floured 8" baking pan. Sprinkle with crunch topping and bake at 350 for 40-45 minutes.
6.
For the crunch topping: blend ingredients into crumbles and spread evenly on top of banana cake batter.
