Anchovy Canape

A quick recipe that is practical and always well liked. Prepare the next time unexpected company pops in!

Ingredients
4
oz canned flat anchovy fillets, packed in olive oil
2
small garlic cloves, peeled and minced

tsp lemon juice
1
tsp freshly ground black pepper
8
slices of French bread
1/4
red onion, thinly sliced
1/4
bunch of fresh arugula
1/4
cup mayo
Directions
1.
Drain oil from anchovies and set aside. Lay anchovies flat on a paper towel to take off excess oil.
2.
Preheat oven to 350 degree. Slice french bread on a bias, and drizzle anchovy oil over bread and toast bread lightly on both sides, about 5 minutes in total.

In another small bowl mix mayo, lemon juice, garlic, and pepper, adjusting lemon juice and garlic to your liking.
4.
Place a small amount of garlic mayo on to toasted bread, followed by a few pieces of fresh arugula leaves and an anchovy fillet, twisting the fillet so it sits on top of arugula.
5.
Next place thinly sliced red onions on top and place skewer through to secure the red onion and serve!
