Black Bean 'N' Pumpkin Chili

Delicious fall and winter chili

Ingredients

medium onion, chopped

medium sweet yellow pepper, chopped

garlic cloves, minced
1
can black beans, rinsed and drained
1
can solid pack pumpkin
1
can no sodium diced tomatoes, undrained

cups low sodium chicken broth
2
tsps dried parsley flakes
2
tsps chili powder
1-1 1/2
tsps cumin
1-1 1/2
tsps dried oregano
spinach
Directions
1.
Put all ingredients except for spinach into a 5-qt slow cooker. Cover and cook on low 4-5 hours. Put in spinach the last 30 minutes and serve with your favorite roll!
