Blue Berry Muffin

Yield 12 muffins, 2 1/2 oz. each

oz all-purpose flour
5
oz granulated flour

tsp baking powder
1/4
tsp salt
2
eggs
oz milk fl.
2
oz unsalted butter, melted
1
tsp vanilla extract
5
oz blue berries
1
tbsp lemon zest
Directions
1.
1. Sift together the dry ingredients ( flour,sugar, baking powder,salt)
2.
2. Stir together the liquid ingredients ( eggs, milk, melted butter, vanilla extract)
3.
3. Stir liquid mixture into the dry ingredients. Do not over mix. The batter should be lumpy
4.
4. Gently fold in the blue berries and lemon zest
5.
5. Portion into greased or paper-lined muffin cups and bake at 350 f
6.
until light brown and set in the center
7.
6. Cool muffin in the pan for several minutes before removing
