oz all-pourpose flour

pt whole milk

oz whole butter, melted
Directions

1. Place twenty 4 ounce greased ramekins or popover tins on a sheet pan and drop 1 table spoon of beef

or vegetable oil in the bottom of each ramekin. Place the ramekins in 425 F oven until the fat smokes
3.
2.Sift flour and salt together into a large mixing bowl. In a separate bowl, whisk together the eggs,milk
4.
and butter. Pour the liquid ingredient into the dry ingredient and whip until smooth
5.
3. Remove remekins from oven and fill each approximately two-thirds full with batter. Bake at 425 f for

20 minutes without opening the oven door. After 20 minutes, lower the heat to 375 F and bake until the

popovers dry out inside, approximately 10 more minutes.

4. Remove popovers from the oven, unmold and serve.

5. for crispier popovers, slit the sides of the umolded popovers to allow the steam to escape. Place on

a sheet pan and return them to the oven until the tops are firm, crisp and brown, approximately 10 minutes
