Egg Plant Bayou Teche

Eggplant topped with Crab meat

Ingredients
eggplant 2 slice

oz bread crumb
1
oz garlic
1
oz shallot
1
oz parsley
salt tt
pepper tt
1
oz parsley
2
oz crammeat
Directions
1.
1. Eggwash and Breaded the Eggplant using a Standard Breading Procedure.
2.
2. In a Satuee pan, Start with butter garlic and shallot and sweat a little.
3.
3. Add Eggplant and Cook on both sides. Remove to the side and cook crab meat for 2 min
4.
4. Place eggplant on plate then add crab meat on top of it. Parsley and lemon for garnish.
