Cumberland Sauce

Ingredients

each orange
2
each lemon
2 1/2
tbsp Minced Shallots
2 1/2
cups Currant Jelly
1
tbsp dry mustard
1 1/2
cups ruby port wine
1
tsp salt
small pinch cayenne pepper
small pinch ground ginger
Directions
1.
1.Remove the zest from oranges and lemons and cut into julienne. Juice the orange and lemons.
2.
2.Blanch the shallots and zest in boiling water; allow the water to return to a boil and strain immediately.
3.
3.Combine all ingredients. Simmer for 5 to 10 minutes until syrupy.
4.
Hold Sauce under refrigeration.
