lb lean rabbit meat (from 3 pound rabbit

oz/wt fatback
2
oz/wt minced shallots
1
each garlic clove
2
tbsp butter
1/2
tinted curing mix
2
tsp salt
2
tbsp sherry
1
each egg
1/2
cup heavy crème
1
tbsp chopped flat parsley
1
tsp poultry seasoning
1/2
tsp ground white pepper
1
recipe parmesan prociutto crust
Directions
1.
Cut Rabbit meat and fatback into medium dice.
2.
Sweat the shallots and garlic and butter until soft. Cool
3.
Combine shallots and garlic with rabbit meat, fatback, TCM, salt and sherry, marinate 6 hours.
