Phil's Big Green Chile

Phil Odence, one of The Boys of the Grant and Dave Van Wie's college buddy and fraternity brother, makes this recipe for The Boys each June. He was kind enough to make it for us once or twice as well and we have since made it there, even without him.

Ingredients

lb ground pork
Olive oil

medium onions, chopped

cloves garlic, mashed
1
tbsp oregano
2
tsp cumin
3
bay leaves
1
(15 oz) canned chopped mild green chiles
3
fresh mild green chiles
5
large potatoes, diced
2
cans (15.5 oz) chicken broth
Salt
1
jar hot salsa verde (Mrs. Renfro’s is very good)
Directions
1.
Brown pork in Dutch oven.
2.
Chop onions, mash garlic cloves, dice potatoes, and chop chiles.
3.
Remove pork, and sauté onions in a little olive oil.
4.
Once onions are translucent, return meat to Dutch oven.
5.
Add potatoes, garlic, oregano, cumin, bay leaves, canned and fresh chiles, and chicken broth.
6.
Cook for several hours.
7.
Add salt and hot salsa verde to taste.
8.
Serve with warmed corn tortillas or cornbread.
