Russian Salmon Turnover

Russian Turnover

Ingredients

lb salmon fillet, skimmed
salt
fresh ground white pepper

tbps chopped dill

cup butter

cups diced onion

cup rice
1
cup meat broth
nutmeg

lb mushroom cook and chopped
2
hard cooked eggs
3/4
cup volute sauce made with fish broth
1
tbps chopped parsley
brioche dough made with 4 cup flour
1
egg yolk mixed with 2 tbps cream for glazing
Directions
1.
Remove bones from salmon and cut into ¾ inch slice. Sprinkle with 2 tsp salt, pepper to taste and 1 tblsp dill and chili.

Heat 2 tblsp of the butter, soften ½ cup of diced onions, then add the rice and glaze it. Add the meat broth, season with salt and nutmeg and cook in preheated 350 oven, for about 18 minutes until rice is tender. Transfer rice to a baking sheet, cover with buttered parchment paper and leave to cool.

Heat 2 tbsp butter; soften the rest of diced onions and leave to cool.

Mix the cool rice with the fried onion, mushrooms, eggs, volute sauce, the parsley, the rest of the dill and the remaining butter and check seasoning. Roll half the brioche dough into a rectangle and cover with one quarter of the rice mixture, leaving a ¾ inch rim. Continue with layers of marinated salmon and rice mixture, pressing each layer down gently. You should have 4 alternate layers of rice and 2 of salmon. Roll Out the remaining dough and cover the turnover.
